Jasmine Rice with Lime & Cilantro
Trying to cook for three people when everyone has different tastes and aversions can be a challenge, at best. The end result, pretty much all the time, is making three separate dishes for each mealtime.
Keeping it Simple
Rice is one of the few sides that all of us eat; at least, if it is prepared in a way that everyone will eat it!
This one adds a twist to the usual boiled or steamed rice and it's received well enough that I can cook a large pot, portion and put it in the fridge to see all of us through at least two meals; perhaps more.
There's really nothing to it.
All you need is:
1 cup of Jasmine Rice
2.5 cups water
A pinch of sea salt
1 Tablespoon Coconut oil
A handful of fresh cilantro, rinsed and roughly chopped
Zest and juice of two limes
Throw everything into a saucepan with a lid.
Bring to a rapid boil, reduce heat to low, cover and leave to simmer for 20 minutes.
Remove from heat, leaving the lid on and leave it to stand 5-10 minutes.
Serve it up and enjoy.
